About me
Peter Ephraim is a PhD student in the Department of Horticulture at Auburn University. Peter has a strong background in food science, holding a bachelor’s degree in food science and technology from Lilongwe University of Agriculture and Natural Resources in Malawi and a Master’s degree in Food Science from North Carolina State University. Peter’s research experience includes sustainable product development, nutrition fortification, microbiological quality assessments, and shelf-life analysis. Professionally, he has served in food industry roles as a quality assurance manager and laboratory technician, gaining hands-on experience in food safety and quality control. As a PhD student in Dr. Trandel’s lab, his research focuses on assessing blueberry quality variations, shelf-life extension, and postharvest pathology issues.
